Handwritten 2014 Cabernet Sauvignon, Calistoga
There is something truly unique about the ‘Up-Valley’ Cabernets and this Calistoga gem is no different. You can really feel the sun and warmth of the area shine through this wine as it overflows with notes of warm berry compote and applewood smoke. On top of being the warmest of all the growing regions in Napa, Calistoga also boasts the largest amount of volcanic soil, which undoubtedly results in a richer, fuller wine. This is a wine that truly builds to a crescendo on the palate with subtle tannins that give way to a robust dry finish. This wines more rustic appeal lends itself perfectly to a summer’s eve around the fire pit though it goes remarkably well with anything off the grill or out of the smoker. Give this Cabernet a little room to breathe with one to two hours of decanting or, if possible, a few years to reflect on its glory in the cellar.
